I tested this skillet against a high-end non-stick pan for making crispy dosas. The Lodge retained heat far better, resulting in a perfectly even, golden-brown crust that non-stick simply cannot achieve.

From a materials science perspective, cast iron is incredibly porous. When we "season" it, we are actually polymerizing fats directly into these pores using heat, creating a natural, hydrophobic plastic-like coating.
