Every morning begins with this bowl in my kitchen-lab. Wild blueberries — not cultivated ones — carry 3× the anthocyanin density. Combined with kefir's diverse probiotic cultures, this is, gram for gram, one of the most microbiome-supportive breakfasts I know of.

    Add frozen blueberries, frozen banana, kefir, chia seeds, flaxseed, and honey to a high-speed blender.

    Blend on high for 60 seconds until completely smooth. The consistency should be thick enough to eat with a spoon — add 1–2 tbsp more kefir if too thick.

    Pour into two wide bowls. Work quickly — the frozen base will begin to melt.

    Arrange toppings in sections: granola for crunch, fresh blueberries or sliced strawberries, coconut flakes, hemp seeds, and bee pollen if using. A drizzle of honey finishes it beautifully.

Wild blueberry anthocyanins reach the colon largely intact and are metabolised by Bifidobacterium and Lactobacillus species into bioactive phenolic acids.
