Curry Leaf Tree

Murraya koenigii

The defining flavor of South Indian cooking. These highly aromatic, slightly bitter leaves release an intoxicating citrus-meets-roasted-nut fragrance when fried in hot oil.

Appearance

A small tree growing 4–6 m tall. The pinnate leaves have 11–21 shiny, dark green leaflets. It produces small white, fragrant flowers and edible (but not heavily consumed) black berries.

Culinary Uses

Essential in South Indian and Sri Lankan curries, dals, and chutneys. Typically used in a "tadka" (tempering)—fried in hot ghee or oil with mustard seeds at the beginning or end of cooking.

Used in traditional medicine to aid digestion, prevent premature graying of hair (often infused in coconut oil), and help regulate blood sugar levels.
